Honestly, until I started making my own food at home I don’t think I realized how disappointed I’ve actually been by breakfast foods that I’ve ordered at restaurants. One of those breakfast foods being the wee and humble, bank-breaking avocado toast!!
I do find that I’m an avocado purist, and a lot of “avocado mixes” that I’ve had usually deeply let me down. They’ll be over citrusy, too onion-y, or too much salt! So for mine all I do is take a half avocado, spread it on a freshly toasted piece of bread, and ground fresh black pepper on top.
Sometimes I add Trader Joe’s “Italian Bomba Hot Pepper Sauce” after the avocado if I want a little spice. To be honest, I add this sauce to probably everything at this point though. It is pretty incredible.
My next topping usually is a handful of arugula with a little lemon squeezed on top. I ran out of arugula for this round unfortunately, but that’s one of my favorite parts that I add!
The last component is a fried egg right on top! I’m obsessed with frying eggs now, there’s something just so beautiful and fun about it. It’s become my morning meditation, hahaha!! I’ve been frying my eggs in olive oil lately on medium-high heat for about 2-3 minutes. Usually I use the same pan as what I toasted my bread in (I don’t have a toaster) so the pan is a little extra hot and it’ll be finished quicker then.
